Rice Pudding (Share Your Mother's Recipe Entry)
Old fashioned rice pudding is delicious served warm or chilled. This recipe has been in the family for a while and is creamy sweet and simply perfect. From our home to yours we hope you enjoy
Equipment
- Double Broiler
- Stove
Ingredients
- 1 Quart Milk
- ½ Cup Rice
- ½ Cup Sugar
- Pinch Salt
- 1 Tsp Vanilla
- 1 Tsp Nutmeg
- ½ Cup Raisins
Instructions
- Place water in bottom half of double boiler and allow to heat while preparing pudding ingredients
- In top half of double boiler, place milk, rice, sugar and salt. Place over boiling water and adjust heat so that water simmers.
- For first half hour of cooking, stir frequently to stop rice from lumping. Continue to cook about another hour and half until rice is very soft. Stir occasionally.
- Add vanilla, nutmeg and raisins and stir to blend. Mix a small amount of cooked rice with beaten egg, then return to remainder of pudding.
- Stir until pudding thickens slightly.
- Serve either warm or cold. Pudding thickens with standing
