Lemon Coconut Cake
This recipe comes to us from our very own sales rep Beverly.
Ingredients
½ teaspoon Perfect Puree Lemon Zest,
½ teaspoon Boyajian Lemon Oil 100% pure
3 Cups FruitFilling, Lemon Filling
1 batch Pastry Star, Meringue Express

Instructions
- Make 1 batch of the cake mix. Following package directions. Before blending batter add ½ teaspoon Lemon Zest, and ½ teaspoon lemon oil. For each 9” cake you make. Bake and cool cakes.
- Split cakes in 1/3rds.
- Fill the center 2 layers with lemon filling.
- Make Meringue Express according to directions.
- Ice cake with meringue.
- Coat the top and sides with the coconut.
